Biography
Dr Siew-Young Quek, Associate Professor in Food Science has research interests in in food processing with a focus on fats and oils, fruits and seafood. She has worked with a number of New Zealand food and beverage companies on technical aspects of product development. Her research encompasses a variety of developments related to functional food.
Research Interest
Dr Quek’s current work includes extraction and characterisation of bio-actives and flavour compounds from plant material, including from food industry waste. Her laboratory is well established to conduct evaluations of antioxidant potential and oxidative stability using methods provide to provide better indications of antioxidant activity in vitro; encapsulation of bioactive components for delivery through functional foods; and evaluation of the effect of processing on the nutritional value of food and food structure
